Abstract

One of the most consumed foods among different populations and consumption, almost all age groups include chicken meat and eggs. One factor that affects poultry production process ultimately contaminates the metals that are different ways to enter the food chain and If you can not climb many effects on human health or the quality impact.
The present Study was done to determine the presence of heavy metals, including: arsenic, cadmium, lead, nickel, copper, iron and zinc in food chicken eggs were supplied in Tehran in three consecutive months.
A total of 50samples of chicken meat and eggs was collected from meat and eggs stores in Tehran. Sample preparation was performed using wet acid digestion. The amounts of heavy metals were measured by using inductively coupled plasma-optical emission spectrometry. Data analysis was performed using spss statistical software. To compare the levels of heavy metals between the limbs of the U Mann Whitney test was used, and also between different brands and Kruskal-Wallis, ANOVA was used.
The analysis showed that the average concentration of metals (mg/ kg) in chiken eggs and meat were for cadmium 0.01 and 0.008, for lead 0.074 and 0.03, for arsenic 0.03 and 0.007, for nickel 0.014 and 0.008, for copper 1.46, and 0.49, for iron34.37 and 6.15, and for the zinc 12.55 and 4.2 mg/ kg respectively. The results also showed there were no significant differences (p<0.05) in terms of the amount of heavy metals in different organs of chickens. Compared between different brands, this relationship was significant (p<0.05). As compared to Iranian meat and the imported chicken significant differences (p>0.05) were observed only in term of cadmium, arsenic and lead.
 Eggs have the highest and the lowest metal was in the chicken meat. Heavy metals limit values set by Iranian and Codex standards are lower and it is healthy and safe. The important thing is that eggs contain the essential elements is higher than chicken meat and Eggs are a good source of nutrition
